Italian Style Tomato Soup

This quick and easy Tomato soup recipe uses the Morphy Richards Saute and Soup maker to create a delicious tomato soup with red peppers and Italian Salami.

Ingredients
  

  • 1 tbsp Extra Virgin Olive Oil
  • 1 Brown Onion
  • 50 g Salami

Instructions
 

  • Peel and chop onion
  • De-seed and chop red pepper
  • Chop Salami
  • Chop Basil
  • Prepare Garlic, Salt and Pepper, Puree and Wine
  • Add the oil to the Soup Maker and press the Sauté Button.
  • After one minute, add the onion and garlic and sauté for 3-4 minutes stirring frequently with a wooden spoon or spatula.
  • Add the red pepper and salami and cook for another couple of minutes, stirring as necessary.
  • Turn off the sauté function by pressing the Sauté Button. Add the remaining ingredients in the order listed to the left and stir.
  • Add tomatoes, white wine, veg stock, rice, basil, salt and pepper and rice
  • Place the Lid on the Jug and select the Chunky Setting.

3. We use lazy garlic in our recipe however if you prefer you can use a single crushed clove which is the equivalent to the quantity listed.

5. If you find that your tomato soup is too thick once the cooking cycle has ended then you can always set to blend for a couple of 30 second cycles to change the consistency.
